Zesty Spring Spaghetti

When the asparagus season arrives in April, you have to take advantage! Fresh wild asparagus is so versatile and can be utilised in so many dishes. If asparagus isn't on your list of vegetables to buy, then that needs to change and this recipe will do that for you. This dish is bursting with fresh flavours and gives off a real spring vibe! Plus, it's so easy to do, just look at the number of ingredients needed!


Ingredients

- 1 pack of asparagus

- 1 lemon

- 1 packet of smoked salmon

- 1 red onion

- Butter

Such a small shopping list needed for this one

Method

1. Cut the asparagus and red onion into small pieces and add to a hot pan with olive oil. Squeeze half a lemon into the pan and give them a toss. Add the squeezed lemon slices to the pan too just to get that extra zesty flavour.


2. You can also add a splash of white wine to the pan to enhance the flavours. Add it to the asparagus and let it cook down burning off the alcohol. Plus, pour a cheeky glass for yourself. Would be rude not to.


3. Boil water in a large pot with salt and add the spaghetti with a twisted motion to stop the spaghetti from sticking. Don't forget to save some of the pasta water, so with a mug just take out a little from the pot.


4. Just before the spaghetti is cooked, flake in some of that beautiful smoked salmon to the pan, giving it a little mix. Once the spaghetti is al dente, drain it and add it straight to the pan.


5. Add a little of the cooking water and a knob of butter to make it nice and silky. Add a touch more lemon juice depending on your palate.


6. Now it's time to plate up into a bowl. Finish it off with a drizzle of olive oil and twist of black pepper, and you're all done! How easy is that!

Like I said in my blog post "Quarantine Cooking: Part 2", looking for fresh, local ingredients is so important. Not only are they full of nutrients and minimal preservatives, but you also have a better idea of where the ingredients are coming from, thus creating a healthier food choice. Cooking should be fun, and with so many of us getting in the kitchen more regularly these days, we should be enjoying it and trying different dishes we have never done before.
